How I wished I was not in the 'have a picky eater' category. But I am! My 15 month old Hunkie won't hardly eat veggies or fruit. So a couple months ago my mom gave me Jessica Seinfeld's cookbook, Deceptively Delicious and I thought I'd try some recipes.  I went through and picked some easy ones to make and ones I thought Lil' Hunkie would like.  The book is about making veggie purees and hiding it in food.  My first choice: spinach. I thought I'd share the two recipes I made in two parts so as not to make it too lengthy as I will share the recipe.





I just steamed the spinach in a skillet with a little dab of water..about 90 seconds.





Put spinach in blender then pureed till smooth and creamy.


This is for freezing purposes.  A 10 oz bag made 1 cup of puree. Each recipe I tried needed 1/2 cup of spinach each so a 10 oz bag was perfect!


 Pita Pizzas
8 (4-inch) whole wheat pita pockets
1/2 cup spinach puree
2 cups bottled tomato sauce
2 cups thinly sliced part skim mozzarella

1: Preheat oven to 400 F.
2:  Spread spinach puree on each pita so that the spinach come to within about 1/2 inch of edge.  Spread the sauce over the spinach; it should cover the spinach and come to within about 1/4 inch of the edge of the pita.  Now lay the cheese over the sauce, covering any place where the green comes through.
3:  Place the pizzas on a foil-lined baking sheet and bake until the cheese melts and begins to brown, 5-10 minutes. Let the pizzas cool 5 minutes before serving so the cheese cools and doesn't pull off (and the spinach stays completely invisible).





As you can see my pitas are a little bigger than what the recipe says...my Walmart didn't have them. Also I used pizza sauce for more flavor and didn't realize till I got home that I needed sliced cheese instead of shredded. Note: this is what happens when you become a mommy!! :)


When I put the sauce on I realized I had too much spinach....I only made these two.  I guess I was getting excited thinking Lil' Hunkie would love it!





It was yummy! But to my dismay Lil' Hunkie waved his hands and head "no" and wouldn't even try a bite! So then I was eating the 2nd one the next day and he wanted some...ate several pieces!! Success! Until I made the second recipe............
